Clone of Stone India Pale Ale

If it’s appropriate that we can create a beer with the sole purpose of emulating an already-existing beer, it should be entirely seemly that I lazily deftly copy-paste that beer’s description from it’s rightful owners:

An “India Pale Ale” by definition is highly hopped and high in alcohol – you’ll find our Stone India Pale Ale to be true to style with a huge hop aroma, flavor and bitterness throughout. If you’re a hop-head like us, then you’ll love our Stone India Pale Ale! Medium malt character with a heavy dose of over the top hops! Generous “dry hopping” gives this beer its abundant hop aroma and crisp hop flavor.


As they say, aim for the stars, and if you miss, you’ll still have 5 gallons of beer.

Ingredient list:

1.0 lbs. US 2-row
0.875 lbs. Crystal 10
3.3 lbs. CBW Golden Light LME
4 lbs. Light DME

0.5 oz Chinook
0.64 oz. Perle
3 oz. Centennial

Wyeast 1056 American Ale (Activator line)
4 oz Light DME (priming)

Hop and grain schedule:

90-60 mins – Steep 1.875 lbs grain ~180°F
60-50 mins – Gradually add 3.3 lbs. LME in boil
50-40 mins – Gradually add 3.75 lbs. DME in boil
60 mins – 0.5 oz Chinook
60 mins – 0.64 oz Perle
15 mins – 2 oz Centennial
After primary fermentation ends 1 oz Centennial

During bottling: Used leftover DME for better head/body, but regret to not have supplemented to greater than 4 oz since 23 oz bottles were used for this one.

Original Gravity: 1.064? *broken hydrometer*
Suspected Alcohol-by-Volume: 6.8%

All in all, a very solid IPA, but definitely missed the mark of a Stone IPA. Retains that “homebrew malt” taste despite being vastly more clear than #34 or the IFA. As for the hop profile, it’s in the ballpark with a very nice aroma and standard level of IPA bitterness, but leaving out the magnum pellets (at 60 min.) may have been a poor choice after all.

A good beer, and one that blows away IFA and #34, but the bar has certainly been raised since then, and I would like to take another swing at this one in a few weeks.
